Why we only sell whole bean coffee (and how to keep it fresh)

Grinding just before you brew makes the biggest difference to your cup. Here's why, and how to store your beans.

Every bag of Azora coffee is whole bean. It's the simplest way to make sure your coffee tastes the way it should when you brew it.

Why grind fresh?

Once coffee is ground, far more of it is exposed to air, and it starts to lose its aroma and flavor quickly. Whole beans hold on to it much longer. Grinding just before you brew keeps the most of what makes the coffee special.

Which grinder?

A burr grinder gives the most even grind, which makes for a more even cup, but any grinder is better than buying pre-ground. Match the grind to how you brew:

  • Pour-over: medium-fine, like table salt.
  • French press: coarse, like sea salt.
  • Yemeni-style, spiced: fine, like powdered sugar.

How to store your beans

  • Keep them in an airtight container or the resealed bag, away from light and heat.
  • Don't keep them in the fridge, where they pick up moisture and smells.
  • Buy an amount you'll finish in a few weeks.
